Beignets Fresh from New Orleans
Beignets are sweet French doughnuts that are square and do not have holes in them.
Dissolve the yeast in the warm water in a big basin.
Combine 2 cups of flour with the milk, oil, sugar, and egg.
To make a soft dough (the dough will be sticky), stir in enough of the remaining flour.

Avoid kneading. Set aside in the fridge for the night.
Get an electric skillet or deep cast-iron pan heated to 375° with 1 inch of oil.
Cook the squares in batches, frying each one until golden brown.
